Choosing a drying method

Fruit, vegetable and tomato powders are available in three drying methods. It is not a quality ranking — it is a trade-off between color retention and cost.

FD

Freeze-dried

Whole fruit or vegetable frozen, dried under vacuum, then milled. The closest result to the fresh material.

  • Color & flavor: highest retention
  • Carriers: none
  • Relative cost: $$$
  • Best for: premium and clean-label products
AD

Hot-air dried

Sliced and dried with heated air, then milled. The workhorse method for vegetables, alliums and tomato.

  • Color & flavor: good, with some heat loss
  • Carriers: none
  • Relative cost: $$
  • Best for: everyday seasoning, snacks and sauces
SD

Spray-dried

Fruit or vegetable purée atomized and dried in a hot-air tower into a fine powder.

  • Color & flavor: moderate — heat-sensitive notes reduced
  • Carriers: declared on the spec sheet
  • Relative cost: $
  • Best for: volume beverage, soup and seasoning bases

Packing, documents and delivery

Single-ingredient powders only — we do not blend, mix or reformulate. What you approve in the specification sheet is what ships in the container.
